Chitlins


Do you still eat chitlins
In the cool cold holidays
& black eyed peas and collard greens
When new years roam our ways


Errbody eats spare ribs now
But only just a few of us
The stomach of the cow


Sometimes mere survival
Brings swagger to the plate
When the slop they were to good to eat
Is the fuel that makes us great
